Instant Pot Orange Chicken over a fresh Asian salad
One topic you’ll hear me share about often is food accessibility. To me, this is the idea that everyone deserves access to healthy, delicious food options [no fancy grocery store required].
This is why I create many budget-friendly meal options that can be made as meal prep or used to serve a family.
All in all, I believe that healthy food doesn’t have to be boring - and it sure doesn’t need to be complicated!
This simple 20-minute dinner of Instant Pot Orange Chicken over a fresh Asian-inspired salad is a go-to in our home, and I hope it becomes a regular in your home as well!
Instant Pot Orange Chicken
Yields about 4 servings
Prep Time: 5 minutes
Cook Time: 20-25 minutes (depending on Instant Pot settings)
What you’ll need:
- 2-3 chicken breasts, trimmed 
- Juice of 1 orange 
- 1/4 cup coconut aminos ( or gluten-free Tamari or soy sauce) 
- 2 tsp grated ginger 
- 1/4 cup water 
What to do:
- In a small bowl, mix together the orange juice, coconut aminos, ginger, and water 
- Add chicken breasts to Instant Pot and coat with the sauce 
- Set to the “poultry” setting and let cook 
- Once ready, shred the meat and set aside 
Now, it’s time to prep the salad!
Asian-Inspired Brussel Sprout Salad
Prep Time: 10-15 minutes
What you’ll need:
- 2 cups brussel sprouts, finely sliced 
- 1 red bell pepper, finely sliced 
- 1/2 cup shredded carrots 
- 1 bag romaine lettuce mix 
- 1 small container mandarin oranges, low sugar or no sugar added 
- 1/4 cup roasted, unsalted cashews 
- About 3 Tbsp Annies Homegrown Sesame Ginger Dressing 
What to do:
- Prepare the brussel sprouts by finely slicing them (chop off bottom stem area and slice - should be a lettuce consistency) 
- Add to a bowl and combine with remaining veggies, mandarin oranges, cashews, and dressing 
Now top your salad with the Instant Pot Orange Chicken and wa-la! Dinner is served.
