Oatmeal Chocolate Chip Pancakes

Oatmeal Chocolate Chip Pancakes
Is there anything better than a cozy bowl of oatmeal on a chilly fall day? What about a piping hot stack of pancakes? … Well, this was my inspiration to combine the two and make these Oatmeal Chocolate Chip Pancakes!
With the thick oatmeal texture and fluffy pancake consistency, these have quickly become a favorite in our house.
Oatmeal Chocolate Chip Pancakes
Yields 6-8 pancakes
Prep Time: 10 minutes
Cook Time: 10-15 minutes
What you’ll need:
- 1/2 cup Quick Cooking Oats [can also do GF oats] 
- 1 cup Bobs Red Mill Oat Flour [can also make your own with regular or GF oats by pulsing in the food processor until it’s flour consistency] 
- 1/2 tsp baking soda 
- 1/2 tsp salt 
- 1 tsp cinnamon 
- 1 flax egg [1 Tbsp ground flax seed + 2 Tbsp water, let sit 10 minutes to gel up] 
- 2 Tbsp coconut oil, melted 
- 1 cup coconut milk 
- 1 tsp vanilla 
- 1/4 dairy-free chocolate chips [I use Enjoy Life Foods brand] 
What to do:
- In a large bowl, mix dry ingredients (oats through cinnamon) 
- In a small bowl, mix wet ingredients (flax egg through vanilla) 
- Combine the wet and dry ingredients 
- Fold in chocolate chips 
- Pour about 1/8 cup batter at a time onto a hot, greased griddle or pan and flip halfway through to cook evenly - [NOTE: this batter is THICK. I recommend spreading the batter out a bit on the griddle to help it cook evenly. You can add a tad bit more coconut milk if desired, but I enjoy a nice thick pancake!]
